My 2020 Ram 2500 has a 2-1/2” receiver. I need a 6” drop adapter that will hold my 2” bike rack.

You will want to use the Patriot Hitches Adjustable Drop Hitch Receiver Adapter # PH67SR with a Reducer Sleeve # 325-GH-007 to carry your bike rack. The adapters like the Roadmaster # RM-076 you found are only to be used when flat towing and are not designed for the stress of carrying a hitch mounted accessory or towing a trailer.
