Hello Chris. For your 2012 Ford Escape I recommend the Curt Class 3 Hitch # 13650. This hitch has a 2" receiver which is standard and will give you a ton of options for a bike rack.
My personal favorite bike rack is the Kuat NV 2.0 # BA22B. This rack will work with the 2" hitch and it can carry 2 bike weighing up to 60 lbs apiece. So this will work with virtually any bike, even heavier e-bikes. It will also accommodate larger tires up to 5" wide. The Kuat racks are top quality, and it will look cool on the back of your car.
