According to my online research the maximum safe trailer weight for all versions of the 2001 Jeep Grand Cherokee is 5000-lbs. This is the towing capacity for the vehicle itself.
The hitch that is installed on your Grand Cherokee also will have a trailer weight rating. This may be less than the vehicle capacity so I suggest you check the safety/warning sticker on your hitch receiver. We offer both Class II hitches rated at 3500-lbs towing capacity and Class III hitches rated at 5000-lbs towing capacity. For reference I have linked our page that will show you all hitches offered for your Grand Cherokee.
Some of these hitches will have a higher towing capacity if used with a weight distribution system, but the vehicle capacity remains 5000-lbs and should not be exceeded. Even if the hitch is rated for higher weight the vehicle limit must be observed.
