There are indeed two catalytic converters on your 2004 Chevrolet Tahoe built into the y-pipe just after the exhaust manifold. According to my research there are four oxygen sensors in total on your Tahoe, one before the catalytic converter and one after the catalytic converter on each side. The MagnaFlow Heavy Metal Loaded, Stainless Steel Catalytic Converter part # MF99006HM can be used to replace the factory catalytic converters however, it will be best if you leave the factory oxygen sensor bungs in place when you make your cuts or else you will need to drill new holes and weld new bungs on. Basically, the cut line for both sides of the old converter will need to made so that the oxygen sensor bungs are not compromised.
I understand cost is most likely the reason you are wanting to use the universal catalytic converters however, unless you will be doing the install yourself I can almost guarantee the labor you will pay to have the universal catalytic converters installed will exceed that of the MagnaFlow Stainless Steel Catalytic Converter part # MF93419 which is a direct bolt-on fit. A quick call to your local exhaust shop would undoubtedly confirm this.
In regards to air flow, they will perform similar to the OEM converters but converters in nature are restrictive. I do not have any hard numbers on the air flow figues most likely due to a lack of bench testing from the manufacturer.
