The 235/80R16 size tire, like the Karrier ST235/80R16 Radial Trailer Tire # AM34903, will measure about 30.8" for overall diameter and have a section width of 9.25". This tire/wheel combo has an 8 on 6-1/2" bolt pattern. If you need a bolt pattern of 6 on 5-1/2" then you will want part # AM32764 instead.
Grown diameter is something that is related more to tires that are used for aircraft because it has to do with the landing gear. Since this isn't continually used with a vehicle or a trailer every little detail needs to be accounted for.
Trailer tire manufacturers don't take measurements for the grown diameter because it isn't as crucial because the tires won't flex enough to really make a difference. We recommend having at least 4" of clearance between the tire and your fender to account for any movement from the leaf springs. This would also be enough room to accommodate any slight flexing of the tire.
